Scotch Eggs are eggs wrapped in fried meat.
I just used simple ingredients at home.
Crispy on the outside and moist and tender on the inside!!

I think it's better to cover the egg with meat finely and fry for a very short time!

* ingredients (4 scotch eggs)
4 eggs(room temperature), 1Tbs vinegar, 1tsp salt
200g ground pork(or sausage), chopped green onion
1tsp cajun spice (or paprika, red pepper powder), pepper and salt
flour, 1~2 eggs(lightly whisked), bread crumbs, oil to fry

* please note,
1. Put salt and vinegar when boiling the eggs to prevent from cracking.
The eggs has to be at room temperature before boiling. It might crack if you use the eggs straight out of the fridge.
Doesn't have to be halfway cooked! It's up to you.
2. You may also add green onion, onion, carrots or any other veggies into the minced pork.
But remember to chop the veggies and roast on a pan, then cool down before use.
The frying time might differ depending on the amount of pork. (usually 4 to 5 minutes)
3. Try not to squeeze too hard when you wrap the eggs with pork.
If you find if difficult to do it with your hands, spread the meat on a plastic wrapper and place the eggs on it, then wrap up.
(I used my hands, though)
