Scrambled egss - in a pan, in a microwave, or sous-vide. Which is best? In theory, scrambled eggs should be almost impossible to get wrong, but in practice it can be quite hard to get right. The conventional method of cooking scrambled eggs is to do them in a frying pan with butter. It takes careful attention to get this right. A quicker and easier way is to just microwave them, but I don't like the texture produced by that method. The third way is to cook them sous vide. While this takes much longer, the texture is soft, silky, creamy, superb!
