Lionel Lévy, the Michelin-starred chef who heads the kitchen at the new Hotel-Dieu in Marseille, loves to revisit the classics. The protégé of Gérard Garrigues and Alain Ducasse is best known for his signature (re)inventions, including his bouillabaisse milkshake and, now, his burger BLT.

As guest chef at the young&foodish BurgerMonday pop-up in London he reimagined two American classics, the burger AND the BLT, merging them into one creation and replacing their customary condiments with Provençal ones.

When Lévy served this, the very first version ever of his stunning burger BLT, most diners were startled. Few knew what to make of it, how to eat it or which end was 'wich.
