I enjoy sweet things when the sweetness is not overpowering. So that generally means making your owns sweets, cakes etc, because manufacturers load their products with huge amounts of sugar. It's not good for your teeth, and it's not good for you. End of lecture. I first had these 'Rolos' about 5 years ago at a steak restaurant (Hawksmoor) in London. Regular Rolos, I find, are too sweet for me. These restaurant-made sweets with a bit of salt in the caramel were just sensational. I thought I'd share the recipe - you'll love them, and they make a great gift too.
