Smoked some pork back ribs for father's day 2011.
pork back ribs.
Applewood Rub with:
about a 1/2 cup brown sugar
1 1/2 tbsp of smoked paprika from KCMO Farmers Market!
1/2 tbsp onion powder
1/8 tbsp celery salt
salt
pepper

Rub it on ribs and let sit for at least 8-10 hours. I did 36 for this. No more than 72 I would say.

Got good coals and hickory wood chunks from grocery store (Well wife and youngest did! Thanks!).

Used a spray bottle with half apple juice and half water to spray on the ribs as I went. To keep them moist.

NO sauce added. To be added later if one chooses. I choose not to.

Took about 3 and half hours at 225 degrees to smoke. That was with putting in a tin roaster pan for about 45 minutes in the middle of it all. Let it smoke on the grill about 30-45 minutes after being in roaster pan. The roaster pan was uncovered and in the grill in the middle of things. Once the meat starts pulling back from the bones I do this so as not to over cook it.

6 full slabs. I cut them in half to fit 2 halfs in a gallon bag with the rub. Which I kept in the fridge.

After cooking the first 6 half slabs I wrapped them in foil and the kept cooking for another half hour in there. Then I let them get to room temp and put in gallon plastic bags and into the freezer for another day.

The final 6 half slabs just sat in the roaster OFF the grill. Continued to cook for about a half hour.

They tasted good to me.
