The original idea of this drink came up from the research of flavors of the Dutch colonies when Jenever was drank.
I found out an Asian-producted citrus - the Honey Pomelo-. Largerly produced in China, it's eaten also in Thailand, where they make a mixture of salt, red pepper powder and sugar to dip the fresh Pomelo into.
At this point I had the bitterness (lighter than grapefruit) and the citrousness to underline and balance the Genever. I needed a sugar based ingredient: the Elder Flower Syrup.
Where I'm from, it's a traditional syrup and it's largely homemade and delicious. In this case also underlines the floral porfumes of the Genever and helps connecting the ingredients.
Knowing that red pepper isn't everybody's favourite, the Indian kitchen came up to help me: traditionally they alternate natural yoghurt with their spicy foods to "reset" the mouth and be ready for the next plate.
And this is how the name also came up: a new first sip after anytime you eat the yoghurt!
