Cook as close to 300-315 degrees F. as possible to keep the loaf moist. At this temp range the loaf should take about 1.25-1.5 hours. Check the internal temp at the one hour mark to see how close you are. The internal done temp is a minimum of 165 degrees F. Of course the higher the temp of the kettle the less time it will take.

I added a handful of wood chips at the beginning of the cook and at the 30 minute mark when I gave the loaf a 180 degree spin (to help it cook evenly).

I do not measure anything so amounts are approx. Be careful with the red pepper flakes and red hot sauce or the loaf might have too much of a heat kick to it. Mine had about a med-heat kick. We’ve only eaten leftovers cold and the heat is barely noticeable.

• 1/2 Tsp. Ground Thyme,
• 1/2 Tsp .Ground Sage,
• 1/2 Tsp. Onion Powder,
• 1/2 Tsp. Garlic Powder,
• 1/2 Tsp. Chili Powder,
• 1/2 Tsp. Goya Seasons,
• 2 Tsp. Franks Red Hot Sauce,
• 1/2 Tsp. Crushed Red Pepper Flakes,
• 1/2 Tsp. Black Pepper
• 1.5-2 Tsp. Dried Oregano
• 2 Large Eggs
• 1/3 Cup Water (optional for added moisture) - Add last
