The subject of gluten sensitivity and celiac disease is now dominating the mainstream media. This presentation will provide an understanding of gluten sensitivity and celiac disease, and demonstrate how to recognize the differences in the presentation, progression and clinical consequences of the two conditions.
The historic methods to identify these conditions will be discussed, as well as more recent comprehensive testing options that reduce false negatives and that accurately reflect gluten sensitivity identification consistent with the frequency of clinical observations seen by practitioners. Recent advances in laboratory medicine have identified accurate testing for not only gliadin (the primary test used to identify gluten sensitivity), also for gluten cross-reactivity, deamidated gliadin, gluteomorphins, multiple gluten epitopes, and gluten immunochemistry.
The clinical aspects that support individuals to reclaim their health with an emphasis on diet and nutrition will be emphasized.
