"Elohim" is used in the Scriptures to refer to just ONE PERSON. So how could it possibly make any sense to claim Elohim is a plural word for the purpose of signifying multiple persons when the same word refers to ONE person? If Elohim necessarily signified plural persons, then we could not use the word to refer to a single person as the Scripture does.
