Just a few years after moving from Vietnam to the United States, Khanh Trinh worked as a dishwasher at the hospital in Bellingham, Washington. Now as a cook at PeaceHealth St. Joseph Medical Center, his pho—a Vietnamese noodle soup—has the biggest fan following in the city. “His pho was a hit from the start because it’s delicious.
