Patatas bravas must be one of the simples Spanish tapas to make, and you'll almost never find a café or tapas bar that doesn't offer them. Authentic patatas bravas are based on a recipe invented at a Madrid café in 1960 - deep-fried chunks of potato slathered with a tomato-based sauce with a hint of smokiness and the kick of chilli. In other parts of Spain, the sauce may have mayonnaise cooked into it or poured over it. To me, that is not patatas bravas. In this video rec ipe, I show you how to make fairly authentic patatas bravas.
