We picked tuna lean in soy sauce, called "Zuke". Its beginning is very long ago.

Hundreds of years ago there was no refrigerator. There were several ways to preserve fish in Japan. One of them was soaked in soy sauce. "Zuke" means to be pickled.

Mirin 200ml (Heating to spill alcohol)
Soy sauce 200ml

Sushi vinegar ratio is 4: 2: 1
4 tablespoons vinegar
2 tablespoons sugar
1 tablespoon salt


Tekka - Don means iron fire - rice bowl. It is a naming imagined from tuna red and wasabi's spicy. It is very tasty.
