Tabbouleh is one of my favourite salads, if it's made right. The tabbouleh you get in Europe tends to be mostly burgul (cracked wheat) with a few flecks of green. Real tabbouleh is the opposite - Lebanese or Middle Eastern style tabbouleh is mostly green from the parsley and mint, flecked with red from the tomato, white from the onion and beige from the burghul. It's fabulous, really easy to make and keeps well.
