SARA LYNN GLUTEN-FREE POWER PANCAKES
Makes 2 pancakes
INGREDIENTS:
1 tsp coconut oil
1 ripe banana, mashed
2 eggs
1 tbsp almond butter
1 tsp honey
3-4 strawberries, sliced
In a medium bowl, mash banana. Whisk in eggs.
Heat coconut oil in large frying pan over medium-high heat.
Ladle batter into pan, creating two ‘pancakes’ that are roughly 4”.
On one ‘pancake’ spread almond butter, or drizzle honey and add sliced strawberries.
Sandwich with second pancake.
