This is an authentic, really rich pie stuffed with spinach, onions, cheeses and herbs that are all enfolded by crispy, flaky phyllo doughThere are 2 methods of preparation, or presentation. The PAN METHOD is prepared in the same manner as Baklava, by layering. Then there is the FOLDING (or triangle) method. This is more work but results in a wonderful presentation of individual servings and depending on what size you make them, they can also be offered as appetizers.
ingredients: 1 box of philo pastry sheets 3bags of spinach or you can use frozen spinach 1pound of feta 1/4 pound of farmer cheese or goat cheese 3 or 4 scallions chooped into small pieces 1/2 a shallot or 1 if they are very small( u can also use yellow onion) 2 eggs lightly beaten 1/4 cup of dill chopped 1/4 cup of parsley chopped. i prefer to mix with my hands. then layer your philo and get to work on the best pie ever, so rich and tasty. another thing i do to add extra flavor is i wilt my spinach in hot olive oil and garlic.. also i saute my scallions and shallot for about 2 min. make sure before you mix all ingredients that they are not hot. thank you for watching and please enjoy my videos.
