I went ahead and posted this as a response video for someone. Let me first say that the way that I prepare my meats are not the 'right way' It's how I like to prepare my meats. I can respect that.

Second - A person can put too much into a piece of meat by heaping extra stuff on top of the meat. To each his or her own, obviously, but it pains me (especially since the cost of meats are going up) to see a good piece of meat go to waste!

Third - A wise man (who owned his own BBQ business for over 20 years) once told me, "You should be able to make your meat good enough to eat without a whole bunch of extra mess on the top. You young boys are just messin up the stuff you try to fix, and that's why nobody gives you any respect." His lesson? You want to impress people? Keep your recipe simple.

Lastly - That same wise man told me, "You can't rush good BBQ - it's done when it's done." If you are in a hurry, then start your cook a day early. Or start earlier in the day.

With that, I hope you enjoy the video. Sorry for a couple of the long pauses in the video - it's my first real video with music and such. And sorry I wasn't able to show you guys the carving. I had put them on at 10 at night and it was late when I pulled them....a brotha gotta get some sleep!

In any case - I did these ribs for Mother's Day - the wife loves smoked meat, and I gotta please my baby!
