Specialty mushroom production is the production of any species of mushroom besides the typical button, baby bella, and portabella; this includes many popular species such as shiitake, oyster, and lion’s mane. In this introductory video from the Cornell Small Farms Program Mushroom webinar series, mushroom extension specialist Steve Gabriel provides a broad overview of both indoor and outdoor specialty mushroom production in the US.
