This recipe can be altered in a few ways. First, it's not critical to use mozzarella if you don't like it as any kind of cheese can be used in the sandwich. An old sharp cheddar is always nice.
We add fresh tomatoes to our sandwiches but onions, ham, or anything like that can be added as well. You could even use pepperoni to make it more like a pizza if you wish.
Fresh basil really gives the sandwich a nice touch. If you are not a fan of basil, any kind of herb or spices can be added.
Give our tomato pesto grilled cheese sandwich a try, and let us know what you think.
