INGREDIENTS 1 pound skinless salmon fillet, cut into pieces 3 slices buttermilk sandwich bread, torn into tiny pieces 1/4 cup mayonnaise 1 large egg, lightly beaten 3 cloves garlic 1 small shallot 1/4 teaspoon cayenne 1 tablespoon chopped chives 1 tsp chopped dill 1 tbsp bread crumbs 1 1/2 teaspoon grated lemon zest 1/2 tsp salt 1 tbsp olive oil
SAUCE INGREDIENTS 3/4 cup yogurt 1 tbsp lemon juice Zest of one lemon 1 tbsp grated chives
EQUIPMENT Food processor Nonstick pan Spatula Zester Knife Cutting board
INGREDIENT PREP: 1. Put garlic, shallot, salt, cayenne, dill, lemon zest, chivesand bread crumbs in food processor. 2. Pulse to chop very finely. 3. Add salmon, bread, mayo and eggs. 4. Pulse again until just combined. 5. Shape into patties (this recipe makes 4 large (meal-sized) or 16 small (bite-sized). 6. Make sauce—mix all ingredients together. Add salt to taste.
COOKING 1. Heat olive oil in a pan over medium-high heat. 2. When oil is hot, place patties in pan and cook for 3 minutes. 3. Flip and cook for another 3-4 minutes. 4. Remove from heat and serve with sauce.
