We went foraging for porcini and other edible mushrooms with enthusiast Paolo Arrigo of Franchi Seeds and his mum Teresa. They may live in England but they’re still very Italian when it comes to food and finding the best wild mushrooms for their risotto. So here are Paolo's top tips on how to pick them.
