Moussaka is a Greek dish consisting of layers of aubergine (eggplant) and tomato/meat sauce, topped with a wobbly bechamel sauce. For me, moussaka is the taste of a Greek holiday. In the UK we usually think moussaka should be made with minced lamb, but in Greece it's more likely to be veal or pork, or a mixture. Some people also substitute slices of potato or courgettes (zucchini) for the aubergine.
