Kneading Auntie Sally's challah; this is a great example of a finished dough, and here I am demonstrating stretching the dough to reveal "the gluten windowpane," a perfect thin structure of dough that does not rip when pulled into a thin rectangle. Her recipe calls for THREE rises - resting the dough, kneading again, resting again, kneading again, resting again, THEN finally making the challah. Phew!
