The English version of Assassin's Creed contains numerous languages: Arabic, Turkish, French, German, Latin, and possibly others. This video translates into English only those lines spoken by main characters.
The full motto of the Knights Templar is "Non nobis Domine, non nobis, sed nomini to da gloriam," meaning "Not unto us, O Lord, not unto us, but unto Thee give the glory." Just the first words were necessary for Altaïr to understand who Al Mualim was talking about.
There's some controversy surrounding the proper translation of Altaïr's "La shay" line. While a word for word translation is something like "Nothing that is real is forever, but everything is possible." it's clear that the developers' intended meaning was "Nothing is true. Everything is permitted." As evidence, consider that in the Spanish version Altaïr says this line not in Arabic but in Spanish: "Nada es verdad. Todo esta permitido."
