Kosher flake salt has flakes somewhat larger than your average table salt.

In most marinade recipes, this type of salt is specifically called for. It seems to bind well with other ingredients. Kosher salt has a clean, crisp flavor often preferred for vegetables and salads.

All salt is technically kosher. This particular cut (particle size) is called "kosher salt" because it's one preferred by kosher butchers as it absorbs more moisture.

Kosher salt is inexpensive and great for everyday cooking and baking! It is preferred over table salt for canning and pickling. Like pickling salt, Kosher salt is free of iodine, which can react adversely with certain foods. Since it's not as dense as pickling salt you'll need to use more, but it varies by brand. For best results, it's best to measure by weight rather than volume to avoid this problem.
