Whether it's "Taco Tuesday" or you're just in the mood for some Mexican food, these tacos will satisfy that craving without the guilt. That's because instead of a regular taco shell or tortilla, nutritionist Kelly LeVeque uses jicama and fills it with a delicious fresh shrimp ceviche and avocado. Watch this video to learn how to make them!

2 cups pre-cooked mini shrimp
1/2 cup chopped cucumber
1/2 cup diced tomatoes
1/2 cup red onion
Juice of 1 lime
1/4 cup fresh cilantro
Salt to taste
Thinly sliced jicama
1 sliced avocado

Use a mandoline to slice the jicama into very thin pieces and soak them in water for 2 hours. Mix together all of the other ingredients, except for avocado. Once jicama is done soaking (it will be pliable), fill it with the shrimp mixture and top with avocado and fresh cilantro.
