A lot of Jill's combos do similar damage (assuming you get as much hits in as you can and end them the same way), they mainly differ in how much corner carry they have and whether or not you use up your wall/ground bounce. If its a solo combo then there's rly no reason not to use the bounces, they're easier and have more corner carry, its sometimes worth saving up your bounces to use later with assists or DHCs but its better to test it out first to see if the damage is worth it.

The character specific combos only seems to work on characters that are a bit "floaty" AFAIK, but it works on a lot of characters. Usually after ensnarement you can only follow up with a light attack or st.M but against these characters you can go straight into launcher.
