During that class you will learn how to make Pomme Soufflées - Puffed Potato
Those puffed potato are shaped with a Heart Cutter. The technique is to accommodate home cooks. It is actually a new technique that I developed. Usually those potato require two fryer pan. In that video only one fryer will be used so it does not intimidate anyone.
You will need to be able realize those gorgeous potato heart:
1 Russet potato. A heart pastry dough cutter a mandoline and some oil at a temperature of 300F to start. When the potato start to puff up a little you will need to increase the temperature of the oil so it reach 350 F. The pommel soufflés will then puff up completely. You will then let them cook till they achieve a nice golden brown color. While the potato are cooking you need to constantly swirl the fryer pan. Being careful not to burn yourself.
If the oil is to hot, the potatoes will color to fast and won't achieve a crispy texture. Cook the potatoes in the oil till the are nice golden brown and crispy.
When the potato are done, remove then onto an absorbent paper and season them with salt. Enjoye with The love of your Heart.
