The completely new color palette George Lucas introduced in 2004 often gets overshadowed by other alterations in discussion, like Greedo shooting first. This video shows the difference in color between the theatrical versions and the 2004 DVD.

One of the things that made Star Wars stand out in the sci-fi/fantasy genre was that Lucas went for a very soft, natural look. It didn't look like fantasy. It looked like a real world. The 2004 DVDs undo that. It turns everything into an oversaturated wonderland. Also, almost every shot is way too dark, so much detail is lost.
