Habanero Hot Sauce 3 tablespoons extra virgin olive oil 1 small white onion, chopped 3 cloves garlic, minced 1 fresh habanero, seeds and stem removed, chopped 28 ounce can crushed tomatoes 1/2 cup distilled white vinegar 1/2 cup water 2 teaspoons kosher salt 2 teaspoons freshly ground black pepper
1.Heat oil in a saucepan over medium heat. Add onion and sauté till softened, about 4 minutes. Next add the garlic and habanero, cook for 3 minutes more or until all the vegetables are softened and golden in color. Add the crushed tomatoes, vinegar, water, salt and pepper into the pot and stir to combine. Bring the sauce to a simmer and cook for 1 hour stirring occasionally to prevent the sauce from burning on the bottom. Once thickened, remove from heat and let cool. 2.Pour cooled sauce into a blender and puree till smooth. Re-season with salt and pepper if needed.
Yogurt Dill Sauce 3/4 cup plain yogurt 1/2 cup sour cream 1/4 cup mayonnaise 3 tablespoons chopped dill 2 tablespoons lemon juice salt and pepper to taste
1.Mix all ingredients in a bowl. Store in the fridge for up to a week.
Yields: 1 1/2 cups
Green Grape Wine Spritzer 3 cups green grapes, seedless 6 fresh basil leaves 1/4 cup sugar 1 bottle Viognier white wine 2 cups club soda 1 lime ice
1.Muddle the grapes, basil and sugar together in a large pitcher. Pour in the wine, club soda, juice of 1 lime and stir. Add lots of ice and serve.
