6lbs - Chicken Thigh Meat,
5lbs - Pork Ribs (country style),
4lbs - Andouille Sausage,
4lbs - Regular Smoked Sausage,
1lb - Bacon (for rendered fat - 1 cup)
2 packs - Celery
8lbs - Onions (yellow)
3ea - Green Pepper
3ea - Red Pepper
3ea - Yellow Pepper
10 cloves - Garlic
2 bunches - Green Onion
3 bunches - Parsley
9lbs - Rice (approx. 20.5 cups)
3 bay leafs
3 tbs - Worcestershire Sauce
1 tsp - Old Bay Seasoning
1tbs - paprika
1tbs - white pepper
1tbs - black pepper
1tsp - Cayenne Pepper
Salt to Taste
2 tsp - Thyme
1 tbs - Basil
1 tbs - rubbed sage
36 cups chicken stock
