FGCU instructor Chef Sean Lucas oversees his Catering & Special Events class as they complete their final project: organizing a series of catering events around specific themes. The final theme: Tuscany, Italy. Students work on every aspect of the event, from designing to cooking. Over the course of the semester, students study menu planning and pricing, food procurement, safety and sanitation, human resource management, sales and relationships with other departments, and outside vendors.
