Researchers at the University of New Hampshire offer hands-on workshops that teach people how to forage for seaweed in the ocean, how to handle and identify it, and how to prepare several different types of sea vegetables. The program run by UNH Cooperative Extension and N.H. Sea Grant teaches the public how to identify different seaweeds, how to “harvest” them properly, and how to prepare them, under the supervision of the UNH experts. Gabby Bradt, a fisheries expert, talks about how UNH has partnered with local restaurants and breweries to grow the seaweed industry in New Hampshire.
