We'll start by cracking our eggs into a bowl and beating them. In another bowl, peel and mash your bananas. You can mash them as thoroughly as you'd like, but we like our pancakes a little chunky. Then add your eggs to your bananas, and we're adding some cinnamon but that's totally optional. Add some sea salt to bring out the flavors and grease your pan or griddle. We're using coconut oil. Test a dot of your batter on the pan to see if it sizzles. If it does, start making your pancakes! You'll know the first side is done when the edges lift and it slides easily in your pan. Flip and repeat for side 2 and that's it. We used maple flavored agave nectar but as always, you can change it up to fit your taste.
This recipe yields about 8 pancakes.
*You can adjust the recipe easily by keeping in mind that it's 1:1, that is, one egg to each banana. 1:1 makes 2-3 pancakes depending on the size.
