Homemade candied peel, nuts, cranberries and double chocolate (no spices!) in these quick fruit cakes! Try something deliciously different this Christmas, this is not your usual fruit cake!

Ingredients (to make 8 little cakes)

Dark chocolate / semisweet chocolate, chopped - 50 grams
Vegetable oil - 1 tablespoon/ 15 ml(to melt with chocolate)
Whole milk yogurt - 2 tablespoon / 30 ml
Zest of half an orange
Powdered sugar - 50 grams
Egg - 36 grams (whisk one egg and weigh)
Vanilla extract - 1/2 teaspoon
Vegetable oil- 1 tablespoon / 15 ml
Plain flour / maida - 50 grams
Baking powder - 1/4 plus 1/8 teaspoon
Salt - 1/8 teaspoon
Homemade candied orange peel, chopped - 50 grams
Toasted almonds, chopped - 50 grams
Chopped dark chocolate - 40 grams
Cranberries, chopped - 30 grams
