Good fish n chips are actually quite easy to make, once you realise that chips aren't the same as french fries, and that the fish - cod, coley, haddock, hake, any firm white fish really - must be encased in a crispy batter made from flour and beer. Never breadcrumbs! Anyway, it's a very evocative dish for me, and you should have a go at cooking it.
