You can pair mashed potatoes with everything! Here we add some flavor to the mashed potatoes by adding cheese and bacon with garlic. This combination goes with chicken perfectly.

Cheddar Cheese Mashed Potatoes

1 kg 200 g. potatoes
400 g. of heavy cream
250 g. of unsalted butter
100 g. of bacon, seared
6 crushed garlic cloves
225 g. cheddar
crushed black pepper
sea salt
scallion for garnish

Cook potatoes in salted boiling water until tender (15 minutes). Drain well. Put potatoes back in saucepan.
Bake garlic heads with thyme in foil for 35-40 min. Sear bacon in olive oil till golden crisp.
Mash potatoes, add cream, butter and baked garlic, salt, pepper. Put into the baking dish, cover with seared bacon, grated cheese. Bake in preheated to 180°C oven for 20 minutes.

Garnish with chopped scallion.
