White Choc Mud Cake recipe

This is a recipe made with the melting method of mixing. Very
sweet, moist cake - and just a bit heavy. Perfect with a cup of coffee or tea.

White Chocolate - 150 gms (chopped)
Butter or Margarine - 200 gms
Sugar - 180 gms
Milk - 200 ml
Eggs - 2 pcs (beaten)
Vanilla Essence - 5 ml(1 tspn)
Baking Powder - 5 gms (1 tspn)
All Purpose Flour - 300 gms

Preheat oven to 180°C/350°F, then grease & line 6 inch round pan with Grease-proof paper.
On a double-boiler; melt White chocolate & butter in a bowl until completely melted. Add sugar and stir until dissolved, then add milk & stir.
Remove bowl from the steam(double-boiler); add eggs and vanilla then stir. Then add baking powder and flour and whisk until well incorporated.
Pour batter into prepared pan and bake for about 65 - 75 minutes. Check if cake is done by inserting clean skewer or knife that comes out clean. You can also check for golden brown color & pressing gently with fingers and cake springs back.
Wait 5 minutes, then remove cake from pan, peeling the paper and placing on cooling rack to cool completely.

Remember that cakes made with this melting method may be slightly dense and heavier.
If using butter, use unsalted, then add a pinch of salt to your recipe or 1/8 tspn.
