Strawberry Cheesecake Chunk Ice Cream Made Without Ice Cream Maker

My latest addiction is making home made ice cream. This is my second batch of Strawberry Cheesecake with a few changes and improvements from the first batch. The only thing you need is a blender and a metal container to put in the freezer, no ice cream maker needed.

Instead of a "swirl" I decided to make it chunky, so you bite into chunks of the vanilla flavored cheesecake ice cream.

The ingredients:
8 oz cream cheese
1/2 cup sour cream
2 cups heavy cream
1 1/2 cups 1 or 2% milk
1 cup sugar
1 1/2 teaspoons vanilla extract
A bunch of strawberries, as few or many as you want.
A little salt.

Take a blender, or mixer, and add your cream cheese, sour cream, milk, sugar, vanilla extract, and a pinch or two of salt. Mix until consistent.

Add the heavy cream and gently mix until it starts to firm up very slightly. You can tell when it isnt quite as liquid.

Set a portion aside for the vanilla flavor chunks, and then add your strawberries to the rest(strawberry jelly or jam can work too). Blend the strawberries until everything is smooth.

Put the vanilla flavored mix in a metal pan big enough to hold both mixtures, let it freeze solid, while the strawberry flavored mixture cools in the refrigerator.

Once frozen, break the vanilla flavored mix into chunks, pour in your strawberry mixture and mix until the chunks are evenly distributed. You could also add some finely chopped pieces of strawberry at this point if you want fruit chunks as well.

Return the pan to the freezer and stir a few times, every hour or so, then after mixing it a few times to disrupt ice crystal formation, allow it to cool overnight or until solid.

Now you have your own awesome strawberry cheesecake chunk icecream!
