A simple hit on a bottle can form these bubbles... of nothing.

The extreme low pressure boils some of the water, these bubbles then contain very little gas before imploding to balance the pressure.
If you follow the exact definition of "vacuum", even space isn't! But the pressure here is so low that we often talk about "vacuum bubbles".

In addition to the phenomenon of compressed / decompressed water vapor, the propagation and echo of the shock wave from the hammer may also be the reason to these oscillations... Fascinating!
