This is the second day of processing the hog. Today we render lard, make stock and can. As, I state in this video there is not a USDA recommendation for canning lard. However I do can mine 45 minutes at 10# pressure. Meat is processed at 90 minutes per quart (wether raw or cooked) at 10 # pressure stock is 25 minutes per quart at 10# pressure. The meat and stock is USDA recommended.
