Original recipe of the bolognese ragù.
Ingredients for 4 people are: • 300 grams of lean beef (take the pieces of fat meat) • 100 grams of sweet pork bacon (cut into cubes) • ½ cup of red wine (dry Sangiovese) • 1 cup of beef stock • 5 tablespoons of tomato sauce (double or triple concentrated) • 1 onion (peeled and finely chopped) • 1 carrot (peeled and finely chopped) • 1 stick of celery (peeled and finely chopped) • extra virgin olive oil • pepper to taste • salt to taste
