Peel and chop the onion into cubes. Peel and chop the potatoes into thin rectangles. Then, place the onion and the seasoned diced potatoes in the pan and simmer for 15-20 minutes.
Once fried, remove and drain the onion and potatoes. Beat the eggs and salt to taste. Once beaten, mix with onion and potatoes.
Put the pan on the fire again and add the mixture. Remove a little with a spoon and wait (20 seconds) to start curdling. Separate the edges and then cover the pan with a pan larger than the pan and turn. Once that is done, the new one again to settle on the other side.
