How to make cupcakes in the microwave that are vegan and have strawberries in them?

So it's Valentines Day and you waited to the last minute to think of a dessert. Well, you are in luck because you do not have to bake this vegan strawberry cupcake, you can microwave it. And it is such a cute idea because you can decorate it with strawberries on top and it cake . . . in a cup. What is better than that?!

Vegan Strawberry Microwaveable Cupcakes - Cake in a Cup Recipe
Ingredients:
12 ounces strawberries, chopped, no steam/leaves
1/2 cup raw sugar
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon coarse salt
6 tablespoons coconut oil, solid but workable
1 cup almond milk

Directions:

Combine strawberries and 2 tablespoons raw sugar.

In a separate container, whisk together flour, baking powder, salt, and remaining 7 tablespoons raw sugar. Cut in the coconut oil with a pastry cutter, whisk, fork, or rub in with your fingers, until mixture resembles coarse crumbs.

Stir in almond milk until dough starts to come together, then stir in strawberry mixture.

Using a 1 1/2-inch ice cream scoop or a tablespoon, divide cupcake batter into cups or ramekins.

Microwave for 30-60 seconds depending on your microwave. Garnish with strawberries that have been sliced length wise.
