Making soft cheese can be a labourous process, look at the Austrian cheesemaker. This dairy moved 1,500 l soft cheese into moulds within a matter of minutes. Using these pneumatic operated vats, you can tip the curd fast and gently into the moulds. This is an artisan process, slightly maechanised to enable a small cheesemaker to be more efficient.
