Our goose has started laying and it's a real treat to find them in the grass. She hasn't made a nest yet so we're collecting them for the incubator. But in the meantime we couldn't resist eating a couple..

Goose eggs are huge and weigh 5 oz (5 times more than a hen's egg) so you only need one per person at most. They have beautiful thick shells which are not shiny so they may not keep as well as hen's eggs. Other than that, just treat them like normal and use them in baking or any savoury dishes. They are really good.

More soon on how to cook with goose eggs.
