CHICKEN ARTICHOKE SOUP
8 c. chicken broth 6 oz. cooked chicken, shredded 2 carrots, chopped 1 stick celery, chopped 1/2 c. onion, chopped 1 c. couscous or other pasta 1 jar Gracious Gourmet lemon artichoke pesto juice of 1 lemon (optional) 1 bottle Kilikanoon Mort's Block Riesling
Bring broth to a boil in a large pot. Then change the heat to low and add chicken, vegetables, and pasta. Simmer for 30 minutes. Add pesto, stir, and serve. For zestier tasting soup, add a splash of lemon juice to each bowl. Serve with dry Riesling from Kilikanoon.
Note: to make your own low-sodium broth at home, simply boil a chicken in enough water to cover it, along with the same vegetables used for this recipe. Lower the heat to a simmer, and cook for 45 minutes. Cover the pot and let the chicken poach in the water for another hour. Remove the chicken, and strain the broth, discarding the vegetables.
