It's the second crepes week video and now it's time for some savory fillings and some interesting ways of serving them. Today we have crepes with soy mince, with tofu "feta" cheese, with beets and burrito-crepes with corn flour.

Soy mince

We need:
Soy mince - 1 pack (100g dry)
Onion - 1 pc
Garlic - 2 cloves
Tomato paste - 1-2 tbsp
Salt
Your favourite spices

For the sauce:
Mustard - 1 tsp
Tahini - 2 tsp
Paprika
Garlic powder
Water
(You can also ad a couple of table spoons of lemon juice)

An easiest of options, surely many of you have already tried crepes with soy mince. After rolling put them for a short time to the pan without oil and serve with the sauce.

Tofu "feta"

We need:
Tofu - 1 pack
Salt - 2 tbsp
Sugar - 1 tbsp
Vinegar - 1 tbsp
Allspice
Cloves
Bay leaf
Black pepper in corns
Coriander (all according to taste)
Boiling water ~300 ml

Olives
Green onions

This tofu recipe is a real discovery for us! It's just great for any salads (for example for an ideal vegan greek salad), it's a cool appetizer itself and of course it's ideal with crepes. You can combine it with any greens but we recommend trying it with olives and green onions (and crepes) it is really something!

Beets and walnuts

We need:
Cooked beet - 1 pc
Walnuts - a handful
Vinegar - 1 tbsp
Vegetable oil - 2 tbsp
Garlic - 1 clove
Salt

For sure everyone knows this salad. Crepes with it are bright and beautiful and we recommend serving them a la sushi rolls. Gorgeous!

Burrito-crepes with corn flour

We need:

For the crepes:
Corn flour - 200 ml
Wheat flour - 200 ml
Sugar - 1 tbsp
Salt - 0.5 tsp
Sparkling water - 500 ml
Garlic powder
Paprika
Turmeric
Coriander

For the filling:
Red beans in tomato sauce
Avocado
Corn
Red onion (optionally)
Salt and spices

You can use canned beans or stew some cooked beans with a little garlic and spices, two table spoons of tomato paste and some liquid that was left after cooking beans.
It's good to ad some lemon juice to avocado, we didn't have a lemon so we put some lemon pepper instead for a bit of sourness.
The combination of this filling with crispy corn crepe is really something so we recommend drying them a little on a pan without oil.
