Here's a quick and healthy chicken salad recipe that you can create easily at home - it's not your normal boring recipe though; it's way more exciting than a few lettuce leaves and some croutons...

Here I use organic green leaves, alfalfa sprouts, cherry tomato, beetroot, gherkin, spring onion (scallion), radish, thyme, avocado + chicken - with a simple dressing of nutritional yeast, lemon and vinegar.

You could also add: grated carrot, boiled/diced sweet potato, finely sliced bell pepper, celery, boiled egg, mandarin - or any other of your favorite veggies!

Adding in lots of colours and textures keeps things interesting, and is a surefire way of getting lots of great nutrients & minerals into your body.

This is a great recipe for diabetics or anyone following a low carb diet. Also perfect for those wanting to eat gluten, wheat or dairy free!
