Curry goat is a classic Jamaican/Caribbean meal. The long slow cooking of the goat meat makes it tender and succulent. Curry goat is easy to make, and the scotch bonnet pepper gives it flavour and warmth without being lethally hot - the trick with scotch bonnets is to use them whole and remove them from the curry once they've exuded the amount of chilli heat you're comfortable with. Coconut rice and beans is another Caribbean classic, and again, rice and beans is really easy to make.
