Matcha powder is packed with antioxidants and a ton of other health benefits. You've probably seen or tried it in drink form by now, but you just HAVE to try it in pancake form. Watch this video to see how to make these delicious matcha pancakes from nutritionist Kelly LeVeque.
For Pancakes: 1 1/3 cup Bob's Red Mill Pancake Mix 2 tsp matcha powder - Kelly used this one: http://amzn.to/1LQrFfT 1 egg (room temperature) 2 tbsp MCT oil 1/2 cup almond milk 1 tsp ghee (or grassfed butter)
For Toppings: Greek yogurt Granola Maple syrup
Add all the ingredients through almond milk to a bowl and mix until smooth. In a large frying pan on medium heat, add 1 tsp of ghee or grass-fed butter. Pour 1/4 cup of the batter into pan forming 2-3 inch circles. Flip after 1-2 minutes or when you start to see bubbles. Top with greek yogurt, granola, and maple syrup. Enjoy!
